From 4am to 6am, it's a constant ballet in the vineyards. \" It has been five years since we harvest at night<\/strong><\/em> in order to obtain aromatic ros\u00e9s with little colour\".<\/em>\u00a0explains Patrick Galliano, Operations Manager and Oenologist.<\/div>
\u00a0<\/div>
There are three reasons for this decision.<\/div>
Environmental<\/strong> Firstly, the grapes harvested at night do not need to be cooled before pressing, which saves energy.<\/div>
Organoleptic<\/strong> then, harvesting at night allows for a better preservation of the aromas.<\/div>
Qualitative<\/strong> Finally, the freshness allows the colour of the berries to be preserved and to offer wines of a subtle pale pink.<\/div>

According to Patrick Galliano, 2021 promises to be a good year<\/strong> : \" We have a good balance <\/em>between sugar\/acidity, everything to make a beautiful product, very aromatic. I am confident<\/em> \".<\/div>

However, the year was terrible: Covid-19, frost in April; drought in June, July and August; fires in August and hail for some... But the constant efforts and passion were rewarded! In the end, only 3 of the 100 hectares of Saint-Maur could not be harvested because of the fires. Nothing to deplore in the cellars or the wineries.<\/div>
